Fried Pike-perch with Veggies

I'm actually a first-time user of Blogger, and have no idea on how to promote a blog, make friends etc here. So, if anyone sees this post, please drop me an idea or two :) If I manage to gather some reasonable readership, I intend to write from time to time about  Uzbekistan and its people, culture, arts, cuisine and so on, as well as my general thoughts and experiences.

Since I'm posting for the first time, I'd like to start sweet :) One of my top hobbies is cooking. Today I cooked filleted pike-perch with veggies, and am sharing photos and the recipe.


The dish consists of two parts: veggies and fish, which eventually end up together. Here is the list of ingredients for the veggie part (all quantities are approximate, good for 4 hungry people):
1. Two medium to large carrots;
2. Potatoes about as much in weight;
3. Some radish (just skip this if not available in your area);
4. Pepper and marrow;
5. Onions;
6. Garlic;
7. Spices of your choice (for me these are ground coriander seeds, dry red pepper, dry savory, cumin, corns of black pepper);
8. Herbs (spring onions, coriander, dill).

First fry carrots in well heated sunflower oil for 5-7 minutes, until they start taking light brown cover. This is very important as it largely determines the taste of the entire dish.

Then add potatoes and radish, then pepper and marrow, and finally onions, each in 3-4 minute intervals.

Afterwards add salt and spices, and leave the whole thing on very slow fire until you prepare the fish.

Smash one egg, add salt, spices, and a teaspoonful of vinegar, mix it all well.

Cut 0,5 kg (1,1 lb) of fish into pieces, soak well in the marinade and leave for about half an hour.

Roll each piece of fish in flour. Make sure the fish is completely covered with flour.

Then fry it in well heated oil on strong fire for about 3-4 minutes on each side.

Add your fish to the veggies, add herbs and pour some red wine for flavour and mildness, close the lid and leave it all on moderate fire for about 10-12 minutes.
